Paczki pies, 260-calorie baked paczki arrive for Fat Tuesday

Deep-fried, doughnut-like paczki are so popular in metro Detroit, they’ve inspired the creation of other tasty treats, including a Paczki Pie from Achatz Handmade Pie Co. and healthier baked paczki from both Achatz and the Give Thanks Bakery in Rochester.


The pies, with cream puff-like crusts, are filled with vanilla pastry cream, topped with four-berry filling and finished with whipped cream rosettes. Whole pies weigh 2.75 pounds, but slices are also available for lighter appetites. 


New this year at Achatz are baked, brioche-like paczki with pastry cream or four-berry fillings. At 260 calories each, they’re lighter than traditional deep-fried paczki, estimated at 300-450 calories. Achatz will have them in limited quantities in stores Friday, Sunday, Monday and Tuesday, and “when they’re gone, they’re gone,” says Hillary Morgan, assistant manager of the Troy store. (Achatz locations are closed Saturdays.) 


Rochester’s Give Thanks Bakery began making baked paczki a few years ago and has developed a following for them, says owner Gerald Matthes. 


The store takes advance orders and sells them only on Fat Tuesday. The dough is proofed in a rounded shape until it’s light and airy and baked in a convection oven before being filled with Bavarian cream, lemon, raspberry, strawberry, apricot or chocolate fillings.

The Paczki Pie at Achatz is priced at $14.95. Slices cost $2.85. Achatz baked paczki cost $9.99 for six. Give Thanks’ baked paczki are priced at $1.50 each
