It’s Fat Tuesday, which means a few things: if you own stock in a bead-producing country, you should be seeing a profit; if you’re in New Orleans, you should be seeing a lot of chaos; and if you have a baking enthusiast near you, you should be seeing King Cake. King Cake is a traditional recipe for Fat Tuesday, but like other baked goods, it can often be inappropriate for Celiac disease sufferers. Ingredients:


(Filling)

4 Tbsp. butter

One apple, peeled and chopped

¾ cup packed light brown sugar

¼ cup gluten-free all purpose flour

1 tsp. ground cinnamon


(Cake)

¼ cup warm water

Two large eggs

8 Tbsp. unsalted butter

4 Tbsp. granulated sugar

1 packet active, fast rise yeast

¼ cup warm milk

2 Tbs. milk for brushing on cake before baking

3 cups gluten-free all purpose flour

2 tsp. gluten-free baking powder

½ tsp. salt

½ tsp. nutmeg


First, make the filling by coating the apples in the flour. In a separate bowl, mix together cinnamon and brown sugar and stir in apples. Melt the butter and set aside. Preheat oven to 350 degrees F.


To make the cake, combine the yeast with 1 tbsp. of the granulated sugar and the 1/4 cup warm water. Stir and wait for it to proof as you prepare the rest of the cake. In a mixing bowl, blend the 8 Tbsp. of butter and 3 Tbsp. of granulated sugar until fluffy and light. Pour in milk, eggs and two cups of flour and mix well. Fold in baking soda, nutmeg and salt and continue to mix. When well-integrated, add yeast and flour and continue to mix until dough clumps together easily.


Line a baking sheet with parchment paper and dust dough with flour before spreading it out onto the sheet. Brush your melted butter on top of the dough and and distribute the flour/apple/cinnamon/sugar mixture over the butter.


Roll up the dough like a Swiss roll and curl it around to form a circle. Brush the 2 Tbsp. of milk onto the cake and cover the cake with wax paper for half an hour to let it rise.


Uncover cake and insert into warm oven. Bake for 20 minutes, adding five extra minutes if too doughy. Spread store-bought icing over cake and top with sprinkles. Cool and serve.
